Our Halloween Feast!

I've just written a blog post about our family Halloween shenanigans, but I thought our Halloween feast deserved a mention in my Vegan Food Blog because it was a glorious symphony of orange which not only looked visually appealing, but provided the kids with some healthy nourishment before they collected enough sweets to last a year!

My eldest daughter, Ruby, made two batches of delicious vegan, gluten free Halloween cupcakes which we served on our Halloween cupcake stand. The first were mint and chocolate flavoured, and were absolutely divine, while the second were vanilla and strawberry jam flavoured and were equally as delicious. I'm on my fourth and counting...

I also served a plate of peeled tangerines with small celery sticks poking out of the top, to look like mini pumpkins. Arlo, in particular, is a real lover of fresh fruit, so these got wolfed down in no time at all!

The main dish was a tray of roasted orange capsicums, filled with a lentil/brown rice/vegetable mix, which really complimented the theme and, while unique, were simple enough for the children to enjoy.

I also put out some celery sticks and carrot sticks with some homemade hummus, which is always a hit.

This was all washed down with the leftovers of a huge pan of pumpkin soup I'd made the day before, from the flesh of the pumpkins we'd carved. I added it to a range of other autumn vegetables and my favourite stock, boiled it all up and blended it to create a hearty, warming soup that, to us, is the essence of Halloween.

I love our family feasts and it's especially heartening when you know that the food not only looks good, but is good for you too!
