Chocolate and Goji Berry Squares
I love the bursts of goji berry sweetness in these tasty squares! They’re a perfect accompaniment to an afternoon cup of tea, and they make delicious, healthy treats for the children. I’m so addicted to them, I took a container of them in a cool bag on our recent trip to Germany! It was heavenly to finally arrive at our hotel after a long flight, put my feet up and enjoy one with a mug of chai!
They’re so simple to make, it’s easy to keep a constant supply of them in the fridge.
Put the following ingredients in your vitamix/food processor until they form a thick paste:
1 cup of raw almonds
¼ cup goji berries
2 cups pitted dates (about 20 medium sized dates)
3 tbsp coconut oil
3 tbsp cacao powder (or unsweetened cocoa powder)
Line a 20cm x 10cm tray with baking paper. Spoon the paste into it and smooth into a level surface.
Sprinkle a handful of goji berries on top and lightly press them into the mixture, so they stick.
Place the tray in the refrigerator.
Once the mixture has chilled and feels firm, cut into squares or bars.
