Avocado Chocolate Mousse


Combining all the health benefits of avocado with the deliciousness of chocolate, this dessert has become a firm favourite in our house! Don’t worry if you’re not an avocado lover, unless you know it’s one of the ingredients you would never guess. It just provides a very pleasant, rich, velvety creaminess while giving you a healthy burst of potassium!

The best thing about it is that it’s so easy to make! Simply combine the following ingredients in your Vitamix/food processor until fully pulverised and totally smooth:

The flesh of 4 medium sized avocados

3/4 cup of cacao nibs or cocoa powder

3/4 cup of coconut milk

2 tsp of pure vanilla extract

3/4 cup of agave syrup

1/8 tsp of sea salt

Divide into 6-8 small serving bowls (I use ramekins). Top with crushed nuts (I usually use walnuts and almonds) and mixed berries. You can also add a generous serving of coconut cream before adding your toppings to make this dessert even more decadent!

It will keep well in the fridge for about three days, but in our home these delicious treats are usually devoured as soon as they’re made!
