Chia Seed Pudding with Strawberry Coulis


This is the perfect dessert; light, refreshing and totally delicious! Thankfully, it’s also really simple to make.

Chia seeds date back to the Mayan and Aztec cultures, who supposedly used them as an energy booster. "Chia" itself means strength. Nowadays they’re considered a superfood and contain healthy omega-3 fatty acids, carbohydrates, protein, fibre, antioxidants, and calcium. So this is a treat you can enjoy while reaping plenty of healthy rewards!

To start, thoroughly combine the following ingredients in a bowl:

½ cup of chia seeds

3 cups of coconut milk

4 tbsp of agave syrup

Leave this mixture to chill in the fridge for 3 hours.

Then, make the coulis:

Heat the following ingredients in a pan, over a low heat, until the strawberries are soft:

1 cup of chopped strawberries

4 tbsp of agave syrup

½ cup of boiling water

Transfer the contents of the pan into a blender and blend until smooth.

Keep this mixture in the fridge until the chia seed mix is ready.

You’re then ready to assemble the puddings!

Alternately place a thick layer of the chia seed mix and a thin layer of the strawberry coulis in 4 glass jars until there are 2 layers of each.

Top with sliced almonds and mint leaves.
