Organic Buckwheat, Apple and Walnut Salad in a Lemon Tahini Dressing
Buckwheat is a highly nutritious, delicious fruit seed that’s cheap to buy and very easy to cook. Protein-rich and gluten-free, it’s beginning to feature a lot more frequently in our family meals in place of grains like rice.
To make this salad, I took one 500g packet of Infinity Foods Kasha Roast Buckwheat and cooked it according to the instructions. While it was cooking, I put the following ingredients in the salad bowl:
3 chopped spring onions
1 red apple (peeled and chopped into small chunks)
6 tablespoons of crushed walnuts
3 tablespoons of chopped mint
2 tablespoons of chopped coriander
2 tablespoons of chopped parsley
I then made the tahini dressing by combining the following:
The juice of 3 small limes
3 tablespoons of tahini
2 minced cloves of garlic
1 teaspoon of salt
Half a cup of water
I added the cooked buckwheat and the tahini dressing to the salad bowl and mixed well.
This makes a perfect side dish or a great meal in itself. Buckwheat has a nutty, thick texture which is hearty and very filling. The apples provide a lovely fresh crunch while the herbs balance the fibre by adding delightful bursts of complimentary flavour.
